Citrus and Spinach Salad
Dressing
1/2 cup grapefruit juice
2 tablespoons mustard
1/4 cup olive oil
2 tablespoons poppy seeds
2 tablespoons grated onion
1/4 teaspoon salt
Freshly ground black pepper to taste
Salad
4 cups spinach leaves
1 cup mandarin oranges
1/2 cup red onion, sliced into rings
In a small bowl, combine dressing ingredients. Chill and set aside for serving time.
At serving time, place salad ingredients in salad bowl. Toss with about 1/4 cup of the chilled dressing.
Serves four to six.
Cook's note: Prepare the dressing in advance to the flavors can blend.
Lean Suggestions: Reducing the olive oil to 2 tablespoons, reduces the recipe to 148 calories and 9.4 grams of fat per serving. Cutting the poppy seeds to 1 tablespoon further reduces the values to 137 calories and 8.4 g fat.
