Holiday Oatmeal Cookie Mix
Mix
2 3/4 cups all-purpose flour
1 teaspoons salt
1 teaspoon baking soda
2 cups firmly packed brown sugar
1 cup granulated sugar
2 cups solid vegetable shortening
6 cups (1, 18-ounce container) quick or old fashioned, uncooked
4 (1-quart each) clear, unbreakable plastic jars
4 cups "Add Ins" such as chocolate chips, dried fruit or nuts (See variations below)
To prepare
1 egg
1/4 cup water
1 teaspoon vanilla
For the mix: Stir together flour, salt and baking soda in very large bowl. Add sugars; mix well. Cut in shortening with pastry blender or two knives until mixture is crumbly. Stir in oats.
In 1-quart, clear, unbreakable plastic jar with lid, layer as follows: 1 2/3 cups cookie mix, 1/2 cup "Add-Ins," 1 cup cookie mix, 1/2 cup "Add-Ins," 1 cup cookie mix. Place lid on jar; seal tightly.
Repeat using remaining mix and "Add-Ins" to fill three more jars. Add gift tags with preparation instructions.
Makes enough cookie mix for four gift jars.
Add these instructions to the jar: Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray.
In large bowl, combine 1 egg, 1/4 cup water and 1 teaspoon vanilla; mix well. Add entire contents of 1 jar of Holiday Oatmeal Cookie Mix; stir with fork until all dry ingredients are moistened and a stiff dough forms.
Drop by rounded tablespoonfuls onto cookie sheets. Bake 14-16 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire cooling racks. Cool completely.
Makes about 3 dozen.
Variations: The following variations provide ingredient amounts for one gift jar. Confetti Cookies: Use 1 cup candy-coated chocolate pieces. Cherry-Berry Cookies: Use 1/2 cup dried cherries and 1/2 cup dried cranberries. Chocolate Cherry Cookies: Use 1/2 cup dried cherries and 1/2 cup chocolate chips. Nutty Chocolate Chippers: Use 1/2 cup chocolate chips and 1/2 cup chopped walnuts, pecans or almonds.
