Apple Pudding Cake

Apple Pudding Cake
2 eggs
¾ cup brown sugar, packed
1 teaspoon vanilla extract
1 cup flour
2½ teaspoons baking powder
¼ teaspoon salt
½ teaspoon cinnamon
2½ cups apples, peeled and diced
1 cup pe-cans

Preheat oven to 350 degrees. Grease a 9-by-13-inch baking pan.
In a large bowl, beat the eggs and sugar until smooth and fluffy; add vanilla.
In a separate bowl, mix flour, baking powder, salt and cinnamon; add to sugar mixture. Fold in apples and nuts. Pour into prepared pan and bake for 30 minutes.
Serve with lightly whipped cream, (not stiff) or ice cream.
Serves eight to 12.
