Apple Pie Quesadilla

Apple Pie Quesadilla
1 tablespoon butter
Cooking oil spray
2 large (10-inch) flour tortillas
1 can (21 ounces) apple-pie filling, see cook's note
1/2 cup finely shredded cheddar cheese
1 tablespoon sugar
1/2 teaspoon ground cinnamon
1. Preheat the oven to 375 degrees.
2. Place the butter in a small microwave-safe dish covered with a paper towel, and microwave at high until melted, about 30 seconds. Set aside.
3. Spray a large baking sheet with cooking oil spray. Place 1 tortilla on the baking sheet. Pour the apple pie filling onto the tortilla and spread it almost to the edge of the tortilla. Sprinkle the cheese evenly over the apple-pie filling. Place the second tortilla over the apple mixture, forming a top crust.
4. Using a spoon, spread the melted butter evenly over the top crust of the quesadilla. Mix the sugar and cinnamon together in a small dish and sprinkle evenly over the melted butter.
5. Bake until the quesadilla is crisp and the edges just begin to brown, 8 to 10 minutes. Remove from the oven. Using a pizza cutter or a sharp knife, cut the quesadilla into 4 wedges. Serve at once.
Serves four.
Cook's note: Experiment with various brands of apple pie filling to see which you like the best. In our testing, we were surprised to find that our supermarket's house brand was the superior choice.
Nutrition values per serving: 362 calories (25 percent from fat), 10g fat (5 g saturated), 63 g carbohydrates, 3 g fiber, 7 g protein, 23 mg cholesterol, 355mg sodium.
