Seared Sea Scallops with Salsify Mousseline and Truffle Vinaigrette
Salsify mousseline8 ounces fresh salsify2 tablespoons white vinegar2 ounces white onion, diced2 cloves of garlic, sliced2 tablespoons olive oil 1/2 cup dry white wine 1/2 cup clam juice 1/2 cup heavy creamSalt and fresh ground pepperTruffle vinaigrette1 black truffle, shredded2 medium shallots2 tablespoons fresh squeezed lemon juice4 tablespoons grape seed oilSalt and fresh ground pepperScallops16 fresh medium sea scallops, preferably dry packSalt and fresh ground pepperDash olive oilFresh watercress or other garnishFor the mousseline: Peel the salsify and place in a large bowl of cold water with about 2 tablespoons of white vinegar (to prevent oxidation). Drain and cut into 1-inch pieces.Heat a saute pan over low heat and gently "sweat" the salsify, diced onion and sliced garlic in the olive oil. It is important not to let the ingredients brown. When all the ingredients have softened and become translucent, add the white wine. Reduce until almost dry.Add the clam juice and heavy cream and simmer until the liquid has reduced by about half. Purée the mixture in a blender. Strain, season to taste with salt and pepper. Keep warm.For the vinaigrette: In a sauté pan gently cook the shredded truffle, shallots in grape seed oil over medium-low heat until the shallots are translucent. Transfer to a bowl and incorporate the lemon juice. Season to taste with salt and fresh ground pepper. Set aside in the kitchen to cool; the vinaigrette is best served slightly warm.For the scallops: Clean the scallops by removing the little muscle on the side. Season lightly with salt and pepper. Sear the scallops in a dash of olive oil in a hot pan - they should have a nice golden crust on each side (about 30 seconds per side).To serve: Place the warm salsify mousseline in the center of the plate. Arrange the seared scallops on top of the mousseline and drizzle the vinaigrette around the perimeter.
