Cranberry-Orange-Papaya Quick Bread With Almond Cream Cheese Spread

2 cups flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup sugar

¼ cup orange juice

½ cup water

2 teaspoons orange flavoring

2 tablespoons melted shortening (not oil)

1 egg, beaten

¾ cup fresh or frozen cranberries, halved

cup chopped, dried papaya, ¼- to ½-inch pieces

Cream cheese spread

8 ounces cream cheese, softened

1 teaspoon almond extract

2 teaspoons finely chopped pecans

Heat oven to 350 degrees. Grease and flour a 9-by-5-inch loaf pan.

In a medium bowl sift together flour, baking powder, baking soda, salt and sugar. Add orange juice, water, orange flavoring, shortening and egg. Mix thoroughly with spoon. Fold in cranberries and papaya.

Pour batter into prepared bread pan and bake 1 hour, checking for doneness with a toothpick at 50 minutes. Remove from oven and place on metal rack to cool slightly; remove from pan and cool completely on rack.

For the spread: In a medium bowl, stir cream cheese, almond flavoring and pecans until well combined. Serve separately.
