Downtown Lombard deli gets grant
A $20,000 grant will help a new deli make its home in downtown Lombard.
The village board on Thursday approved a downtown retail business grant for Shannon’s Deli, which aims to open this spring at 11 S. Park Ave. The deli will be owned and operated by the same crew that runs Shannon’s Corner Butcher Shoppe at 15 S. Park.
Before opening the 42-seat deli, which will serve lunch and dinner and offer deli meats, cheeses and prepared sandwiches, owners will put about $200,000 into a complete renovation of the space, according to a memo from Lombard’s community development department.
The grant will help cover costs including plumbing, electrical and heating and cooling improvements as well as the addition of two bathrooms and a full commercial kitchen. Other costs not covered by the grant include deli equipment and furnishings.
Shannon’s Deli is one of six new shops or offices expected to open this spring in downtown Lombard.
