Local eateries celebrate spring

Spring at last! The last snows have melted away (fingers crossed!) and it's time to get out and about.

Local restaurants are celebrating this season of renewal with menus highlighting the best of spring's fresh produce and other seasonal dishes.

Dishes you can expect to see for a few brief weeks include fresh peas and pea sprouts, green and white asparagus, fava beans, artichokes, green garlic, rhubarb, strawberries, Alaskan halibut, red snapper, blue crab, Pacific salmon and spring lamb. If you're fortunate, you may see ramps, sorrel, morel mushrooms, fiddlehead ferns, nettles and young dandelion greens, and you might also see a few spring libations, like German maibock beers and maiwein, infused with sweet woodruff.

"These things scream spring to me," says chef Jeremy Lycan of Niche in Geneva.

"Springtime is one of my favorite times of the year because of two things," says chef Danny Salgado of Holy Mackerel! in Lombard. "Halibut season starts and rhubarb is in season."

He notes, "Halibut should be perfectly seared golden brown on one side and delicately flaky white on the other."
