Lime Island Fillets

Lime Island Fillets
1/2 cup bottled Thousand Island salad dressing
1 lime
4 mild white fish fillets, preferably skinned, (about 6 ounces each), such as tilapia
Preheat oven to 400 degrees.
Remove the zest from half of the lime, if desired. Cut the lime in half, and set aside. Pour the salad dressing into a small bowl. Squeeze the juice of the zested half of the lime into the dish, and stir mix well. Set the remaining lime half aside.
Arrange the fillets in 1 layer in a 13-by-9-inch baking dish. Spread 2 tablespoons dressing mixture over each fillet. Bake, uncovered, until the fish is opaque throughout and flakes easily with a fork, 8-12 minutes.
Meanwhile, cut the remaining lime half into 4 slices, and set aside. Carefully place a fillet on each serving plate, spoon some of the sauce on top, and garnish with a lime slice. Serve at once.
Serves four.
