Gillian's Baked Mushrooms

Gillian's Baked Mushrooms
1 pound fresh button mushrooms (about 36)
1/4 cup mayonnaise
1/4 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley
1/2 teaspoon garlic powder
Cooking oil spray
1. Preheat the oven to 400 degrees.
2. Remove and discard the mushroom stems and wash the caps. Set aside to drain in a colander. Rinse and dry the parsley. Chop enough parsley to make 1 tablespoon. Set aside.
3. Mix together the mayonnaise, Parmesan cheese, parsley and garlic powder.
4. Spray a 9-by-13-inch glass baking dish (or other similar-size casserole dish) with cooking oil spray. Place the mushroom caps in the dish. Fill the caps with the mayonnaise mixture, about 1/2 teaspoon to 1 teaspoon per cap, depending on their size.
5. Bake uncovered 8-10 minutes, or until the mayonnaise mixture begins to brown and the mushrooms are tender. Serve at once.
Makes about 36 mushrooms (depending on size).
